Two Aussies, one proper pie

"True blue" is what Australians call the real deal — genuine, loyal, no nonsense. It's a promise about how we make food, and it's the name we decided to bake under.

It started at Coyotes Cafe

We're Esther Ling and Ryan Neale — the two behind Coyotes Cafe, our little Aussie cafe and weekend pop-up here in Vancouver. Somewhere between the flat whites and the line-ups, one thing became obvious: people were here for the pies.

Proper Australian meat pies. The kind with slow-cooked filling and pastry that shatters when you bite it. The kind that sells out before noon and has people asking, "can I just take a few home?"

So we put them in the freezer

True Blue Pies is our answer to that question. We bake the same pies we're known for, then freeze them at their peak so you can have that golden, flaky magic whenever you want it — no queue, no "sorry, sold out", just a hot oven and 30 minutes.

Frozen isn't a compromise. Done right, it's the most honest way to get a real Aussie pie from our hands into your kitchen, exactly as we intended it.

No mystery fillings, no cutting corners, no pretending. Real ingredients, recipes we're proud of, and a founder who would genuinely rather deliver your order on his motorcycle than hand it to a courier. That's the deal.
